You have to try this pasta dish made in a cheese wheel

Cheese and pasta are two foods that were just meant to be together. This decadent combo is just what the doctor ordered these days since Calgary has really embraced the whole “polar vortex” thing– so it’s time to warm yourself from the inside out with some Cacio e Pepe. Oh, and did we mention that it’s made in a cheese wheel?!

Yeah, we’re not joking. Calgary’s own Bread & Circus is killing the Italian eats game with this one. By swirling linguine noodles inside a hole in a wheel of Italian pecorino romano cheese, the flavour gets totally absorbed by the fresh pasta. You’ve probably seen it on Insta, but we gotta tell you the real-life view is pretty unbelievable.

Camp out by the kitchen counter area in front of the bar and you’ll be able to catch it. After the noods are fully cheese wheel’d, they’re topped with a sprinkling of fresh ground pepper. There’s no actual sauce on the pasta, just a light coating of cheese from the wheel, so it’s a simple dish but oh-so-ridiculously delicious.

You’d think a whole wheel of cheese would last a restaurant, but Bread & Circus can go through a huge one in just under three weeks. It’s not only used as a mixing bowl for pasta, though– at the end of its life cycle, the pecorino is also used on the 4-Maggi pizza at the neighbouring Una Pizza + Wine. Resourceful, right?! And also crazy tasty. We honestly can’t get into the 4-Maggi pizza because we’ll get emotional.
