Ahhh, the iconic Fairmont Palliser hotel. We know it, we love it, we sometimes sit in their lobby and pretend we can afford it. And now, we’re gonna be eating some seriously delicious meals there! Say goodbye to the Rimrock Dining Room and say hello to the Hawthorn Dining Room and Bar!

As an “ode to the Palliser’s rich history”, the Hawthorn is throwing it back while still keeping things 2019 fresh. We’re talking reimagined interiors, an exciting menu, and a brand new lobby bar. We’re not saying you should show up in a trench coat and meet a handsome stranger here, but you shouldn’t not do that, either.
Things will be opening up on April 2, which means you have 19 days to prep your palate. Till then, we’ll just dream about that modernized Old Fashioned…
