An exclusive look at Calgary’s classiest new restaurant
If you didn’t already know about it, the Fairmont Palliser has got a new fine dining restaurant, and just in time for the summer. Forget about your local date night spot, because the Hawthorn blows it out of the water.
First is the space itself. Airy and opulent immediately come to mind. But (thankfully) there’s a warmth that comes through no matter which part of the dining room you’re in. Maybe it’s the fireplace, maybe it’s the super comfy chairs. Actually, wait, it’s not those, it’s for sure the cowboy mural in the back. It grounds the spot like nothing else could.

Heading there for dinner? You can expect a well-curated menu that ranges from fusion dishes to the classics. We started with a little bit of beef tartare with egg yolk, as well as the tuna conserva. The real winner though was the bread, it is something that we haven’t gotten out of our head since trying it. We’re about insider tips here at Curiocity, if you haven’t noticed yet.
Then we moved onto our main course, and not breaking stride, chose the aged ribeye steak. The meat was tender enough to melt in your mouth, while the sauce au poivre added the perfect kick to the dish. Honestly, we haven’t had a steak that good in a long, long time. Pair that with a salad or a vegetable dish (maybe the carrots) and you’ve got yourself a meal worth remembering.
Finish off the meal with the most elevated take on Cinnamon Toast Crunch you’ve ever heard of. Referred to as a mille crepe, this layered cake satisfied every craving we’ve ever had since age 12. No, we’re not kidding, it is knock your socks off tasty.
Don’t have time for a full-blown meal? That’s alright too, just pull up to the bar for a quick drink and a couple of snacks. While an old-fashioned works every time, we suggest trying out a couple of their specialty drinks.
